Last year, Chelsea made an incredible steamed English Christmas pudding based on a traditional recipe, which included some tidbits of information from my Grandma Jackson, who has crafted, received, and eaten many a figgy pudding over the years.
A figgy pudding made from scratch is delicious. However, an English pudding allowed to cure for weeks, months, or even a year is even better! Here’s a video of Chelsea unveiling one of the Christmas puddings that she made last Christmas and sharing it with our family, including my Grandma Jackson, whose eventual approval set Chelsea (and the rest of us) at ease. It was nice to hear Grandma tell Chelsea stories about how she and her friends used to make the puddings in England.
One of the great things about watching this is remembering that Chelsea made two of those puddings last year. The second pudding has been curing in a corner of our refrigerator the whole time, and we will be eating it this holiday season.
