Spit-Roasted: Whole Lamb

The photo in this next one-photo post is by way of chef and blogger Brett Emerson of Contigo restaurant in San Francisco and his In Praise of Sardines blog. I came across the picture nearly a year and a half ago, and my mouth waters every time I think about it. While the pig takes well to the spit, so too does a whole lamb. I not only love the look of the textured crust that has developed on this lamb, but I am enamored with the medieval-looking spit crafted out of rebar. Underneath the lamb is a very simple rectangular mesh firebox to hold some logs to fire the beast. This is about as simple as it gets. Here’s the link to the whole photo set. Ahhh, the joy of living vicariously through the Internet.
