The photo in this next one-photo post is by way of chef and blogger Brett Emerson of Contigo restaurant in San Francisco and his In Praise of Sardines blog. I came across the picture nearly a year and a half ago, and my mouth waters every time I think about it. While the pig takes well to the spit, so too does a whole lamb. I not only love the look of the textured crust that has developed on this lamb, but I am enamored with the medieval-looking spit crafted out of rebar. Underneath the lamb is a very simple rectangular mesh firebox to hold some logs to fire the beast. This is about as simple as it gets. Here’s the link to the whole photo set.
