Today’s post is the first in a series of one-photograph posts entitled “Spit-Roasted.” These posts are an homage to the age-old technique by which skewered pieces of meat, fish, fowl, or vegetable are roasted in an oven or over an open fire whilst a motor slowly rotates them until they areĀ juicily succulent and meltingly tender.
